This strawberry cupcake is one of the easiest to make but is one of my biggest hits, especially among kids! The best part is, that you only need five ingredients to make the cake! This cupcake features a deliciously spongy strawberry cake with a smooth cream cheese strawberry frosting. The recipe provided will create enough batter to make 24 cupcakes.
Kitsch ‘n Whimsy’s Souped Up Strawberry Cupcakes
To begin, you will need to preheat your oven to 325 degrees. You will then combine the cake mix, milk, oil, eggs, and Strawberry Jello. Make sure to scrape down the sides of the bowl to ensure all ingredients are fully mixed together. This will create your cupcake batter mix.
Next, line a standard sized cupcake tin with cupcake liners. Using an ice cream scoop, fill 24 (or 12 at a time) cupcake liners ⅔ of the way full with cupcake batter.
Bake for 15-20 minutes (begin checking at the 15 minute mark), or until a toothpick inserted into the center of a cupcake comes out clean. Transfer to a rack to cool completely before frosting.
Kitsch ‘n Whimsy’s Souped Up Strawberry Frosting
While your cupcakes are cooling, you will want to go ahead and make your frosting. First, combine the cream cheese, butter, and vanilla in an electric mixer. Be sure to scrape down the sides to ensure the ingredients are completely mixed. Then, add 2-3 tablespoons of Strawberry Jello to the mix, until desired taste is achieved. And finally, add the powdered sugar and blend (on slow speed) until smooth.
Frost your cupcakes by placing your frosting in a gallon sized plastic Ziploc bag with a frosting tip. Simply put the frosting tip all the way into a corner of the bag, snip off the end, and you are good to go! Squeeze the top of the bag slightly to let the frosting come out. Then, simply take a cupcake, and frost in a circle starting from the outside and working towards the middle.
Then, if you like, you can add a sweet little garnish on top of the frosting. For these cupcakes, I like to have a Swedish Fish as my cupcake garnish!
Now just enjoy! (If you are preparing a bunch of these for a party and need to store them for a day or two, place the cupcakes in an airtight container and store in the freezer until the day of your party. Then, take them back out a few hours before your party begins to thaw and serve.)
