Kitsch ‘n Whimsy’s Famous Chocolate Cupcakes with Peanut Butter Frosting

Kitsch ‘n Whimsy’s Famous Chocolate Cupcakes with Peanut Butter Frosting are one of our most requested types of cupcakes we make! This cupcake features a very moist chocolate cake with a creamy cream cheese peanut butter frosting. The recipe provided will create enough batter to make 18 cupcakes.

To begin, you will need to preheat your oven to 350 degrees. While your oven is heating up, combine the flour, baking soda, and salt in a large mixing bowl to create a flour mixture. Next, cream the butter in a mixer. Once the butter is fluffy, add the sugar followed by the eggs, one at a time. This will create your butter mixture. Finally, combine the milk and vanilla extract in a separate large bowl or measuring cup to create your milk mixture.

Next, add ⅓ of the four mixture to the mixer, followed by ⅓ of the milk mixture. Continue adding each mixture in thirds to the mixer until everything is combined together. Be sure to scrape down the sides of the mixer’s bowl part way through. Then, add the cocoa powder, (on slow speed to avoid a chocolate dust plume) just until incorporated.

Line a standard sized cupcake tin with cupcake liners. Using an ice cream scoop, fill 18 cupcake liners ⅔ of the way full with cupcake batter.

Bake for 15-20 minutes (begin checking at the 15 minute mark), or until a toothpick inserted into the center of a cupcake comes out clean. Finally, transfer to a rack to cool completely before frosting.

Kitsch ‘n Whimsy’s Famous Peanut Butter Frosting

While your cupcakes are cooling, you will want to go ahead and make your frosting. First, combine the cream cheese, butter, and vanilla in an electric mixer. Be sure to scrape down the sides to ensure the ingredients are completely mixed. Next, add the powdered sugar and peanut butter. Mix until smooth.

I have found that the absolute BEST way to frost my cupcakes is by using a gallon sized plastic Ziploc bag and a frosting tip. Simply put the frosting tip all the way into a corner of the bag, snip off the end, and you are good to go! Squeeze the top of the bag slightly to have the frosting come out. Then, simply take a cupcake, and frost in a circle starting from the outside and working towards the middle.

Then, if you like, you can add a sweet little garnish on top of the frosting. For these cupcakes, I like to have a miniature Reese’s Peanut Butter Cup as my cupcake garnish!

Now just enjoy! (If you are preparing a bunch of these for a party and need to store them for a day or two, place the cupcakes in an airtight container and store in the freezer until the day of your party. Then, take them back out a few hours before your party begins to thaw and serve.)
